“They do want healthier foods,” Randy Lait, senior director of hospitality services for N.C. State, says of today’s college students. “That’s gone from being something a very small group of people said they wanted to do while they were eating pizza … now it’s turned to people being interested in what their food is, where it came from and how it’s prepared.”
